Hi Gang-
My PHC usually does a pot luck dinner before our meetings, and I'm running out new things to take (I've done everything in the "Phruitcakes" cookbooks that be counted as finger food/pot luck items, of course [smilie=battingeyes.gif] )

Any suggestions? Not to be picky or anything [smilie=battingeyes.gif] but because of scheduling, it has to be something I can make at least the day before then keep in the fridge at work the day of.

As always, I appreciate any suggestions.

This is easy, tasty and even better when it sits around :)

CORN "SALSA" SALAD
(Best if it has time to sit overnight)

1 can black beans (drain juice)
1 can chick peas (garbanzo beans) (drain juice)
2 cups frozen corn kernels (don’t need to cook them)
1 red bell pepper (de-seed and dice)
2 jalapeno peppers (de-seed and dice)
½ onion
1 tbs chopped cilantro
1 lime (just the juice)
¼ cup olive oil
½ tsp honey
Salt/pepper to taste

Let it sit in fridge to let everything marinate

or:

“Asian” Salad

1 package coleslaw mix or 1 head of cabbage chopped
1 large Vidalia onion finely chopped
8 TBS slivered almonds – toasted at 375 for a few minutes (take out before they brown)
8 TBS raw unsalted sunflower seeds – toasted with almond slivers
2 packages of uncooked Ramen noodles – crushed with seasoning packages removed
1 cup of oil
6 TBS white vinegar
4 TBS sugar
2 teaspoons salt
2 teaspoons Accent seasoning
½ teaspoon black pepper

Mix oil, vinegar, sugar and other spices with wisk
Add oil/vinegar dressing to coleslaw mix
Add almonds and sunflower seeds – mix well
Mix in uncooked crushed Ramen noodles
Refrigerate 4-6 hours before serving

This is very similar to a dish we make called Confetti Salad (I think our recipe also includes jicama)

Have you ever had the Kentucky Fried Chicken Potato Bowl?
It's not a finger food, but easy to eat without any cutting, etc.

It's a one-pot dish you can make ahead and then heat it at the time.

Here's a bog with the general idea:

Fry little bites of chicken tenders-season as you wish
Make mashed potatoes for the first layer
Then add corn on top-I like a bit of butter in the corn
Then add chicken nuggets
Pour gravy on top...I make with 2 T of flour in drippings and adding 1 chicken bullion cube to 1/2 cup of water to dissolve and then half a cup of milk and pour into flour and drippings. Season as you wish, but bullion has lots of salt, so I only add pepper.
Top with shredded cheddar cheese

One of my guilty pleasure foods.

Do any of your casserole favorites but try it in cupcake form. Handy for potlucks.
