I soak mine overnight, and then bring to a simmer with diced carrots and onions in low sodium chicken broth for flavor. I want to say 45min to an hour on the stove top.

We mix black beans with feta, walnuts, bell peppers, and olive oil/vinegar dressing for a snack. Yummmy. I probably have six cans of black beans in my pantry always.

Please Please Please!!!PartofthePhlock wrote:the organic black beans normally have less sodium. also you can drain the beans and soak them in cold water to remove additional salt. If you like peppers I have a Cuban Black Bean recipe that uses no salt and is delicious, that I can send to you.
SWMBO had some in KW and is on the search to recreate them....

For those negatively affected (effected?) by MSG... Monosodium Glutamate...read the ingredients of the canned varieties. Bush's makes good beans but they "season"
with MSG. The reduced sodium is typically code for NO MSG.
MSG is a cheap flavor enhancer....gives me headaches and makes me irritable.
I found that when cooking dry beans they have always turned out best by
picking through them as stated above...
RINSE to remove excess starch and...whatnot.
Place in pan and cover with 2 quarts water.
Bring to boil and cover.
Turn off stove and let steep for 60 minutes....
add all the stuff you want plus a BAY LEAF and then slow cook for a couple hours.
Good to go.

Re: I need help with black beans...
MSG has a undeserved reputation.
MSG is a salt formed with Glutamic Acid. Your body creates Glutamic Acid, it also very quickly breaks down MSG into Glutamic Acid and sodium. Glutamic Acid is used to breakdown proteins and is needed for you to live.
There is little physiological evidence for MSG being bad as you need Glutamic Acid and you need sodium (well sodium in moderation).
So if you are "allergic" to Glutamic Acid or sodium you have more to worry about than whether there is MSG in your Sweet and Sour Chicken.
Now the issue maybe that the carriers used to transport the MSG are the issue, that is, the stuff that makes up the powder or the liquid that contains the MSG (i.e. contaminents in the manufacturing process) - These things may well be the real culprit, but little has been done to test this theory.
