SWEET AND SPICY PINEAPPLE KABOBS

Ingredients


1/2 cup brown sugar
1/4 cup rum or pineapple juice
2 tsp pure vanilla extract
1/2 tsp cinnamon
1/4 tsp chili pepper
1 large pineapple, peeled, cored, and cut into 2-inch cubes
12 skewers, soaked in water for 30 minutes
Vanilla Bean Ice cream, optional


Directions

Preheat grill.

In a small bowl, combine: brown sugar, rum OR pineapple juice, vanilla extract, cinnamon and chili pepper until sugar disolves. Set aside. Make each kabob by threading pineapple pieces onto two parallel skewers. Brush the kabobs with the spice mixture. Let stand 10 minutes. Cook pineapple skewers on hot grill for 10 minutes or until golden brown, basting with spice mixture and turning occasionally. Serve with Vanila Bean ice cream, if desired.

That sounds yumma-licious! I think I'll try that this weekend, but add some meat and other veggies and do them like "traditional" kabobs for lunch for a group! :D

They were!!!!! I used coconut rum, and had no chili pepper, so I used 1/4 tsp of red pepper flakes instead...They were deelish, (except the fact I used wooden skewers and not metal :( I hate the taste of wood on my food)

I have enough left over that I will have them again later tonite with my vanilla ice cream :D
