I know The Queen has one that she makes for her office mates and it seems to go over well. I'm sure if it currently has pork products they could be delete or substituted with veggie "sausage" or something of the like.

This recipe caught my eye in an email the other day, but I haven't tried it.
It's crustless bacon cheese quiche, however at the end is a substitute suggestion of zucchini instead of bacon, for a crustless garden vegetable quiche. Sounds delish and delightful to me! And easy... WINNING!

Penny has one for a french toast casserole, I know I have it somewhere, but can't put my hands on it right now....I haven't made it, but it sounded so good!

The Queen's French Toast Casserole sounds way yummy phor my tummy!

1 cup brown sugar (not packed)
1/4 C. butter
1 1/2 pounds cinnamon raisin bread, sliced
6 eggs
2 C. milk
2 C. light cream (I used 1/2 & 1/2)
1/3 C. sugar
1 tsp. vanilla
1/4 tsp. salt
In a saucepan, combine the corn syrup, brown sugar and butter. Melt until smooth and bubbly. Spread in the bottom of an 11x17 glass baking pan. Overlap the bread slices like dominoes on the syrup. In a large bowl, mix the eggs, milk, light cream, sugar, vanilla, and salt. Pour the mixture over the bread. Cover pan with foil and refrigerate overnight.
Bake in a 350 degree oven for 45 minutes, then remove the foil.
Bake an additional 10 to 15 minutes or until puffed and golden brown.
Slice and invert pieces to serve.
Garnish with sour cream, if desired.

BREAKFAST CASSEROLE
Frozen hash browns (loose, shredded) (1 large bag, if you’re making it in a 9x13 pan)
Bacon/sausage/ham (I usually use thin sliced ham, cut into small cubes, and bacon)
Cheeses – pepper jack, Monterey jack, Colby, sharp cheddar
Half & Half
Eggs
Butter
Garlic powder
Onion powder
Pepper
Parsley
Paprika
Cayenne Pepper
Butter the bottom of an oblong casserole dish. Place hash browns on bottom of dish. Brush with melted butter. Sprinkle with garlic powder, onion powder, and pepper. Bake @ 400° for 20 minutes, just until browned. Remove from oven. Cover the hash browns with either ham, sausage or bacon (cooked). Cover the meats with 2 of your favorite cheeses. Sounds yummy! I'll put that in the repertoire! I bought all the stuff for Penny's French Toast Casserole, so I'll be taking that for trial run this weekend!
