LOOKING FOR SIDE DISH OPTIONS

We're looking for side dish ideas for holiday dinners. Looking for ones that are tasty but easy to make. Something that could be made the day before. Looking of recipes with no beef, pork or any red meat. Also no nuts.

Does anyone have a recipe for creamed peas with pearl onions??

I made this cornbread and broccoli rabe strata a while back...it was easy and delicious.

And that pineapple and cheese one (auntie's recipe?)...haven't tried it yet but it sounds yummy.

Do you have the PHruitcakes in the Kitchen cookbook?

The marinated vegetable salad (Madeline McCrary) is always a hit ... it's light, freshing and there's never a drop of it left ... just took it to a gathering and I swear, there wasn't one kernal of corn left. It's very simple to make and keeps in the fridge forever, so you can make it way ahead of time.

Let me know if you don't have the cookbook and want the recipe. I'll post it for you.

Actually both. Couldn't recall who posted the casserole one and everyone did rave about the slaw, too.

Do you have a good okra gumbo recipe? That's always good as a side.
