One of the playlists in my iTunes library is Buffett's studio recordings. I just went through it and here are a few, in no particular order, that I'd like to hear:
Nautical Wheelers (I've already heard it live once, but I'd rather hear this than any number of the setlist mainstays)
Remittance Man
I Don't Know And I Don't Care; I Don't Know (Spicoli's theme) (only because he stopped playing both of them before I went to my first show on the I Don't Know Tour)
Survive (I think it would make a nice acoustic encore)
Creola (another one I've heard live but change is good)
Nobody Speaks To The Captain No More

"Love in the Library" (from the 'Fruitcakes' album). According to the database, he's never performed it live, not even on the 1994 'Fruitcakes' tour.... a shameful act of omission, in my not-so-humble opinion.
C'mon, Jimmy — if it was good enough for the album, it should be good enough for a show or two.

They Don’t Dance Like Carmen No More. Possibly my all-time favorite.
Cuban Crime of Passion is also a song I really enjoy, but it sounds awful when they have broken it out in semi-recent history. The intro is totally different and the tempo is just a hair slower. I love the uptempo of the album version.
Ragtop Day is kind of the same way. Listen to the Live By the Bay version where it’s breakneck speed and then to the recent live version, like from the Workin’ and Playin’ tour. The former is way better.
