One of the playlists in my iTunes library is Buffett's studio recordings. I just went through it and here are a few, in no particular order, that I'd like to hear:
Nautical Wheelers (I've already heard it live once, but I'd rather hear this than any number of the setlist mainstays)
Remittance Man
I Don't Know And I Don't Care; I Don't Know (Spicoli's theme) (only because he stopped playing both of them before I went to my first show on the I Don't Know Tour)
Survive (I think it would make a nice acoustic encore)
Creola (another one I've heard live but change is good)
Nobody Speaks To The Captain No More
Cliches
Smart Woman In A Real Short Skirt (another one I've heard live but it's my dream woman )
West Nashville Grand Ballroom Gowns
Ballad Of Skip Wiley (because he's such a great character in Carl Hiaasen's books)
Twelve Volt Man ( I think I've heard this live but it's another great song he never plays anymore)
La Vie Dansante

Yeah, he recently closed a show with Breathe In, Breathe Out, Move on with Caroline Jones at the Tally Hurricane Show. You can actually download the video or audio from iTunes.

I have heard some of these live before and know that he has played a lot of them. Still, would love to hear them more often than not. Here is a long but quick list I could think of.

"Love in the Library" (from the 'Fruitcakes' album).  According to the database, he's never performed it live, not even on the 1994 'Fruitcakes' tour....  a shameful act of omission, in my not-so-humble opinion.

C'mon, Jimmy — if it was good enough for the album, it should be good enough for a show or two.

They Don’t Dance Like Carmen No More. Possibly my all-time favorite.

Cuban Crime of Passion is also a song I really enjoy, but it sounds awful when they have broken it out in semi-recent history. The intro is totally different and the tempo is just a hair slower. I love the uptempo of the album version.

Ragtop Day is kind of the same way. Listen to the Live By the Bay version where it’s breakneck speed and then to the recent live version, like from the Workin’ and Playin’ tour. The former is way better.

Turning Around is not on one of the albums it was recorded for the soundtrack for the film Summer Rental back in the 1980's

Actually it's on the "this old house" soundtrack. Never released like "turning around"
